Pie Crust Ingredients

  • 1 cup flour
  • 1/2 Tablespoon sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter
  • 1/4 cup water

Filling Ingredients

  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 6 cups thinly sliced, peeled cooking apples
  • 3/4 cup flour
  • 1/2 cup butter

Topping Ingredients

  • 1/2 cup (1 stick) butter
  • 1/2 cup oats
  • 1/2 cup light brown sugar
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda

Directions

  1. Make pie crust per recipe. Parbake. Cool.
  2. Toss apples in sugar and cinnamon. Place in crust.
  3. Prepare topping by cutting butter into remaining topping ingredients. Place over apples.
  4. Cover edge of pie with foil. Bake at 400 for 30 minutes. Remove foil; bake for 30 more minutes, or until topping is golden.

This recipe combine a crust recipe from Smitten Kitchen, a filling recipe from my grandma, and the topping from an apple crisp recipe from my mom.

The original amount of topping was slightly too much last time I made this (although I did not the date), so I reduced it from 3/4 cup of each dry ingredient to 1/2 cup (i.e., resulting in 2/3 of the original recipe). I did not alter the amount of baking powder or baking soda, which should be fine, right?
