Zucchini Bread
Ingredients
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 3 cups unsifted flour
- 3 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 2 cups grated zucchini
- 1/2 cup nuts (optional)
- 2 tsp vanilla
Directions
Sift flour, cinnamon, baking soda, baking powder, and salt together. Mix eggs, sugar, and oil. Add flour mixture. Stir in zucchini, nuts, and vanilla. Bake at 325 for 1 hour. Makes 2 loaves.
