Crust

Ingredients

  • 1/2 cup butter/margarine (cold!)
  • 1 cup flour
  • 2-4 tablespoons cold water

Directions

  1. Cut butter (or margarine) into flour until crust forms small pea-sized balls. Add the water.
  2. Divide dough into two equal parts; press into two 4” x 12” oblongs on ungreased cookie sheet(s). Set aside.

Filling

Ingredients

  • 1 cup water
  • 1/2 cup butter/margarine
  • 1 teaspoon almond extract
  • 1 cup flour
  • 3 eggs

Directions

  1. Preheat oven to 400 degrees.
  2. Place water and butter into saucepan, melt butter, and bring to boil. Remove from heat, and add almond extract. Stir in flour.
  3. Add eggs one at a time, beating well after each.
  4. Spread mixture over oblongs.
  5. Bake 50 min (or 40 with convection oven) at 400 degrees.
  6. Frost while hot!

Frosting

Ingredients

  • 2 cups powdered sugar
  • 1 tablespoon butter/margarine
  • 4 tablespoons cream (or 3 tablespoons half-and-half or 2 tablespoons milk)
  • 1 teaspoon almond extract
  • 1/8 teaspoon salt

Directions

  1. Combine all ingredients and beat until desired texture is achieved.

This is ostensibly an old Mickelson family recipe. That being said, this “family recipe” is strikingly similar to this Betty Crocker recipe. The only difference really is the glaze.

I wonder if I could bake this in either a bread pan or in muffin tins for a more consistent shape.

The two tablespoons of water that the crust calls for is probably enough. Just be more patient and continue mixing!
