Cake Ingredients

  • 1/2 cup butter
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup boiling water
  • 2 cups flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 cup chopped pecans (or walnuts)
  • 5 cups chopped apples

Rum Sauce Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/4 cup butter
  • 1/2 cup cream (or 1/3 cup half and half, or 1/4 cup milk)
  • 2 teaspoons rum extract

Directions

  1. In bowl of stand mixer, cream together butter and sugar. Beat in eggs, vanilla, and boiling water. In a separate bowl, whisk together flour, salt, baking soda, and cinnamon. Add dry mixture to wet mixture, and stir until blended. Stir in pecans (or walnuts) and apples. Pour into 2 greased and floured pie pans.
  2. Bake at 350 F for 35 minutes.
  3. Meanwhile, make rum sauce. Combine brown sugar, sugar, butter, and cream in small saucepan. Bring to boil. Boil for 2 minutes, then remove from heat and stir in rum extract.
