Apple Nut Dessert
Ingredients
Cake Ingredients
- 1/2 cup butter
- 2 cups sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1/4 cup boiling water
- 2 cups flour
- 2 teaspoons salt
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 cup chopped pecans (or walnuts)
- 5 cups chopped apples
Rum Sauce Ingredients
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/4 cup butter
- 1/2 cup cream (or 1/3 cup half and half, or 1/4 cup milk)
- 2 teaspoons rum extract
Directions
- In bowl of stand mixer, cream together butter and sugar. Beat in eggs, vanilla, and boiling water. In a separate bowl, whisk together flour, salt, baking soda, and cinnamon. Add dry mixture to wet mixture, and stir until blended. Stir in pecans (or walnuts) and apples. Pour into 2 greased and floured pie pans.
- Bake at 350 F for 35 minutes.
- Meanwhile, make rum sauce. Combine brown sugar, sugar, butter, and cream in small saucepan. Bring to boil. Boil for 2 minutes, then remove from heat and stir in rum extract.
